Updating daily graphs using linked cell

Greetings. I have about 15 graphs that need to be updated daily and for the most part they contain disparate data. Basically it would save me a great deal of work to link them to a master sheet and update. How does one go about linking continuously updated data to a cell without changing previously input data? I fear that if I am able to set this up and put one data point in on a Monday and put a different data point on Tuesday, it will change the Monday data. Any insights would be most appreciated.
