Guys can we work on Powerbi Projects in excel using power query

Below is synopsis of the project

AdventureWorks Database is a Microsoft product sample for an online transaction processing (OLTP) database. The AdventureWorks Database supports a fictitious, multinational manufacturing company called Adventure Works Cycles. Analyzed data of this fictitious company by connecting and shaping data in Power Query, built a relational model and added calculate fields with DAX measures. Create an interactive Dashboard for data visualization of the performance of the company.

can we do this in excel

Yes you can. Do not see the need to have some steps done in PQ. That DB, in the few versions I saw & used before, is normalized and designed for learning Power Pivot and DAX. It's also referenced in a few books (by Matt Allington/Rob Collie) on the topic.
