My big 3:
Name Manager: http://www.jkp-ads.com/officemarketplacenm-en.asp
Replaces the default name manager with something that's actually, ya know, good. Really helpful for large projects - also does makes making dynamic ranges a little easier with a copy from previous function. Totally free.

You guys already know about this. But if you don't: enables you create 'quite a few' in cell charts. FOSS.

Kind of the swiss army knife of excel addins. I'd give you a whole feature list, but I'd be here a while. I'll put it this way: when I have an annoying problem - something that I know it'll be a PITA to do - I look in this add in first. Probably 80% of the time this is useful.
