Did you ever tried..

* Right Click Pivot Table

* Pivot Table Options..

* Display >

* Classic Pivot Table Layout(Enables dragging of Fields in the grid)


By dragging any field (rows/column) you can manually Re-Arrange your data Field..


By The way if you are not asking for sorting any field.. then SORT by Custom field is another thing you need to learn..
