Analysing curves

Hi

I am planning to conduct a study in echocardiography . Lot of data will be generated in curves __ Quantity versus time , for each of the segments of the heart. I would like to analyse them : Should be able to fit the curves , so that I can know the variable for each point in time , for the different segments. Is it possible with excel . How?
