Countif or Counta to remove blank (Drop Down List)

Hi hope you are well. My name is Bianca, I am deaf.

I need help with counta or countif.

When i added drop down list in excel and the blanks under the items are showing so i want to remove blank. I used counta or countif to =INDIRECT(SUBSTITUTE(E3,"","")) but not working at all.

Please assist.

Further to p45cal's advice, you look like looking for a dynamic dropdown list can ready for new addition items.

So, it it is better to give us what is your expected result together with your attachment.

Edit :

Sadly to know that you are a deaf, but I'm also losing my hearing by over 90%, even I have a hearing aid but can't help.
Now I used hand writing in paper & handphone in communication with the others.
