There is dropdown menu when you click on the field that's added to value field of the visual.
Note that this only works if field is added, not when DAX measure is added to the visual.
FYI - There is no option to make MIN to be default selection. If that's what you are asking. I typically never add field to visual unless there is very specific reason. I prefer to name DAX measure and use that across visuals.
